Paarl, built at the foot of a granite mountain, enjoys a typically Mediterranean climate, with cooler temperatures in high altitude areas. The area is entirely devoted to producing dry wines made from Syrah, Viognier and Mourvèdre, with a general majority of reds. Paarl is the home of many reputable South African estates, including KWV’s monumental cellar (known to most as the Cathedral Cellar). Until 1992, this powerful conglomerate of wine cooperatives reunited almost all South African producers. Finally, to the east of Paarl, the Nederburg estate lies with its back on the Drakenstein Mountain, attracting crowds as one of the most famous vineyards in South Africa.
