Amarula Choclate Mousse

Nothing speaks more Valentine’s Day than the sweet and delicate flavor of chocolate. Try on this Amarula Choclate Mousse to seduce your loved one once again. Happy Valentine’s Day lovebirds.

Key ingredients:

  • Amarula Liqueur
  • Dark chocolate
  • 3 leaves gelatin
  • Maraschino cherries or fresh strawberries, freshly whipped cream and fresh mint leaves for garnishing

  • 250 ml Amarula
  • 150 g castor sugar
  • 500 g milk chocolate
  • 400 g dark chocolate
  • 600 ml cream
  • 3 leaves gelatin
    Maraschino cherries or fresh strawberries, freshly whipped cream and fresh mint leaves for garnishing
  1. Soak the gelatine in cold water for 5 minutes, then squeeze out excess water and set aside in a bowl. Combine the Amarula and castor sugar in a bowl and melt together over a double boiler until the sugar has dissolved. Add the pre-soaked gelatine and mix well. Then add the chocolate and stir the mixture until combined and smooth. Remove from heat and allow to cool. Whip the cream to a soft peak and fold it into the chocolate mixture. Spoon/pour into glasses and allow to set in the fridge. Garnish with maraschino cherries or fresh strawberries, freshly whipped cream and fresh mint leaves.
  2. Transfer the batter to the greased loaf pan and bake until golden brown and a cake tester inserted comes out clean. This should take about 1 hour to 1 hour 10 minutes. Allow the cake to cool completely, then cut into 2,5 cm cubes.
  3. To make the poached fruit, cut up the nectarines and strawberries. Place all the fruit into a medium saucepan and add the brandy and sugar. Bring to a simmer then turn off the heat and allow the fruit to sit in the warm liquid. set aside and allow to cool.
  4. To make the Amarula cream, whip the cream with the Amarula until soft peaks form
  5. To assemble the trifle. Place the pound cake cubes at the bottom of a large deep glass dish, followed by a ¼ of the cooled poached fruit, then cream then toasted almonds, repeat the layers until your elements are finished. Top with prepared fresh fruit and more almonds.
  6. Serve immediately or refrigerate for up to 4 hours.
